1/4 cup plain yogurt
2 tbsp lemon juice
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 1/2 tsp paprika
1 tsp ground cumin
1 tsp ground coriander
1 tsp garlic powder
1 tsp chili powder
1/4 tsp ground nutmeg
1/4 tsp turmeric
pinch of cinnamon
orange food colouring (optional)
1/2 small onion, sliced
1 12-pack Hawaiian rolls
3 tbsp mayonnaise
170g mozzarella cheese, shredded
1 tbsp butter, melted
cilantro, finely chopped (garnish)

2 garlic cloves, grated
1 pimento pepper, finely chopped
1 green onion stalk, finely sliced
1 thyme sprig
scotch bonnet pepper, finely chopped (optional)
1 lb raw shrimp, cut into 2-3 pieces
1 cup warm water
oil for frying
