Chicken: boneless, skinless thighs are recommended. If you prefer chicken breast, you can use that but I find the thighs to be much juicier and full of flavour! Whichever you choose, cut them up into bite sized pieces.
Hawaiian rolls: these types of rolls are best to use for this sliders recipe + they are so soft and sweet. However, you can opt for another type of rolls if you prefer.
Mozzarella cheese: I used mozzarella to get that ooey gooey cheese pull. Also, mozzarella complements the chicken tikka very well. But honestly, you can use another type of cheese if you’d like.
Homemade tikka spice blend: you can use a store-bought tikka spice blend, but truthfully, it is so easy to make and you have better control of how much of each spice goes into it.
Yogurt/lemon juice/olive oil: these 3 are used to marinate the chicken. They help to tenderize the chicken, adds more flavour, and makes it more juicy.
Ginger garlic paste: adds the right flavour to the chicken tikka.
Mayonnaise: you can use regular mayonnaise, spicy mayonnaise, or any other type of mayonnaise that you have on hand.
Onions: adds flavour and texture.
Butter: used to brush over the rolls before baking.
Cilantro: used as a garnish. You can use parsley instead.
How to Make Chicken Sliders
Making Chicken Tikka Sliders could not get any easier. Follow these simple directions for the best chicken tikka sliders.
Prepare the Chicken
Start by cutting your chicken into bite sized pieces and then marinating them: to the chicken, add ginger garlic paste, yogurt, lemon juice, 2 tbsp olive oil, salt, black pepper, paprika, cumin, coriander, garlic powder, chili powder, nutmeg, turmeric, cinnamon, and orange food colouring (optional). Mix this together really well, cover, and let marinate in the fridge for at least 1 hour.
After marinating, heat olive oil in a pan over medium high heat. Add the chicken pieces (cook in batches) and allow to cook until chicken is completely cooked through. You want to cook them on one side for a couple of minutes to develop some colour/browning.
Once done, add all the chicken back to the pan, add the sliced onions, and mix well and let cook for 1 minute. Remove from heat and set aside. The chicken will release its juices naturally and that will add to the juicy chicken in the sandwich.
Assemble the Sliders
Prepare a baking dish that will fit all the rolls in one layer. Either grease the dish or use parchment paper. Slice the rolls in half horizontally so that all the rols are still attached to each other. Remove the top layer of rolls carefully. Place the bottom layer in the prepared dish.
Spread your choice of mayonnaise over the bottom layer evenly, reaching the edges.
Spread the chicken mixture over the mayonnaise evenly, ensuring you are reaching the edges as much as possible.
Sprinkle the shredded cheese over the chicken evenly.
Place the top layer of rolls back on top, pressing down lightly.
Brush the top with melted butter and sprinkle the chopped cilantro over.
Bake the Sliders
Place the chicken tikka sliders in the oven (preheated at 350F) and bake for 15 minutes or until cheese is melted and top is toasted. Pull apart, serve, and enjoy!
Modifications
Spices: these sliders are chicken tikka sliders, so there’s not a whole lot you can change but you can control the heat level. You can more or less chili powder or you can add in another spice of your choice. Experiment and find something that you love!
Cheese: I like to use mozzarella cheese because I find it isn’t overpowering and has the perfect cheese pull. However, you can use cheese that you prefer. Some ideas: cheddar, Swiss, American, or pepper jack.
Rolls: Hawaiian rolls are so good for this recipe. They are soft and sweet and complement the chicken perfectly. You can use other types of rolls as well. I would suggest making sure they’re soft and connected to each other.

After 1 hour, heat 1 tbsp olive oil in a pan over medium high heat. Add chicken pieces and allow chicken to cook through, mixing occasionally. Cook chicken in batches.

Once chicken has been cooked, add all the chicken back to the pan. Add the sliced onions to the chicken and mix well. Allow onions to cook for about 1 minute, then remove pan from heat and set aside.

Leaving the rolls attached to each other, slice the rolls as evenly as possibly, horizontally. A serrated knife works best for this. Remove the top layer of rolls and gently set aside.
